We’re big Organix fans in this house as some of you will know. Organix Goodies snacks are our go-to changing bag snack and we’ve even used their gingerbread men when we’ve been baking before. To celebrate Organix’s 25th anniversary, I’m sharing an Organix no junk carrot cake recipe and hosting a giveaway for you to win a bundle of their tasty no junk foods, worth £25! The recipe I’m sharing has no added sugar, just natural sugars from the fruit used, and do you know what? It’s actually really tasty. I’ve already had two slices… (well the baby demanded one…)

It’s seven tiers of delicious sponges reflecting the flavours of two of their top selling foods – Carrot Sticks and Goodies Raspberry & Apple Oaty Bars – and is topped with another of their best sellers, a Goodies Gingerbread Man. Now, as much as I love to bake, I thought I’d give just one of the recipes a go. This weekend we made the Organix no junk carrot cake recipe. Like most carrot cakes it’s a bit more faffy to make than an all in one victoria sponge, but it tastes great and the effort is worth it to know exactly what is going into it.
Carrot cake – tray bake recipe
- 190g dates
- 200g plain flour
- 50g almond flour (I used ground almonds because we couldn’t find it in the supermarket)
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 240ml sunflower oil
- 3 large free range eggs
- 340g organic carrots
- 120g walnuts
- 100g sultanas
- 225g cream cheese
- 1 tsbp honey
- 1 tsp vanilla extract
- Cover the dates in water and boil (we did for 30 mins as per the packet instructions)
- Sift the flour, almond flour, baking powder, baking soda and cinnamon together. Add in the chopped nuts also.
- Beat the eggs until light and fluffy
- Grate the carrots.
- Remove the dates from the heat and puree with a handheld blender.
- Add the carrots, eggs, oil, pureed dates and sultanas to the dry ingredients and mix thoroughly.
- Pour into greased and floured tray tins. Bake for approximately 30 mins at 160 degrees C.
Leave to cool for 10 mins before turning out onto a wired rack.
For the topping:
Beat the cream cheese until smooth, and the honey and vanilla extract and mix thoroughly. Spread on to the cooled cake.
I was a bit dubious about the cream cheese topping in particular because I love a cream cheese frosting and I’m not that keen on honey. But honestly, it’s really nice. It’s not overly honey flavoured for me and I think that’s because you get a nice vanilla flavour coming through from the vanilla extract.
