Easy baked salmon fillet recipe

Today I’m going to share with you a really quick and easy baked salmon fillet recipe, perfect for a mid week deal. It does have limes in and you may think that I am a bit obsessed with limes, given my first recipe of the week was a delicious key lime pie! This one is savoury and much healthier though!

Easy baked salmon fillet marinated in lime

Serves: two adults but could easily serve three

Ingredients:

2 salmon fillets

1 tsp of lazy ginger (or freshly grated I guess!)

2 limes – zest of one and juice of two

1 clove of garlic crushed

1 tbsp soy sauce (low salt)

Recipe:

Zest one lime and then juice them both. Add all the other ingredients into a shallow dish.

Add the salmon and leave in the marinade for two hours (or more if you like)

Grill or bake the salmon and serve with veg of your choice, plus a serving of cous cous or rice. We tend to bake at 180 fan for 20 mins.

We always cut off a small piece of salmon off both our fillets and leave for Miss Belle to have the next day, or we bake a separate fillet that hasn’t been marinated and then portion it up for her).
