This week’s recipe of the week is a toddler friendly lunch idea – pea patties. I try not to give Miss Belle bread every day because of the salt content. These are really healthy and versatile. The basis of the recipe comes from Weaning Made Easy Recipes: 150 Simple and Tasty Ideas for Spoon-Feeding and Baby-led Weaning. I always use  peas because Miss Belle loves them and I always have some in the freezer! They have a subtle sweetness which most children like, I think. These pea patties can be adapted to include whatever veg you have left in the fridge – peppers and courgettes also work well.

Pea Patties

Serves: Makes about 12 patties depending on the size – my two year old eats 2 large ones with some veg/salad on the side

Ingredients

2 small leeks (or equivalent volume in veg – I sometimes do 1 leek and 1 green pepper)

125g frozen peas

2 eggs

100g flour  – can go half and half with plain white and wholemeal if you have it

1 tsp baking powder

A few leaves of fresh mint (optional but see my tip below!)

Recipe

Chop up your veg and fry in a little oil for about 5 mins until soft. If you’re using leek make sure you chop it nice and small.

Meanwhile whisk the eggs in a bowl with a fork, then add the flour and baking powder and mix. It will be like a really sticky dough.

Add the frozen peas to the pan and cook for 2-3 more minutes. If you have any, add a sprinkling of chopped mint. **Tip – I tend to buy packets of fresh herbs for the occasional recipe and then never need them all. Rather than waste them or throw them away, I chop up all the herbs and bag them up in the freezer, then take them out to add to recipes like this when I need it.**

Add the cooked veg to the egg and flour mix and stir with the fork really well.

Using the same frying pan, add a little more oil if you wish (I don’t bother and just use a non-stick pan) and then add heaped tablespoons of the patty mix. Flatten with a spoon or spatular so they are about 1cm thick. Fry over a medium to high heat for a minute or so each side until brown and cooked through.

These can be eaten warm straight the way or you can freeze them once cooled. I then just defrost them in the microwave and I have a really quick lunch. They are also great for taking as a packed lunch with some salad bits – they don’t fall apart or crumble.

Miss Belle enjoyed them with some left over veg.
